Brunch of Champions!

Coconut Oil Fried Plantains with Onion and Egg White Omlet with Fresh Kale

1 Ripe Plantain~ cut into rounds
1/2 Onion~sliced
1 Large  Organic Kale Leaf
5 Egg Whites
3tbsp Organic Coconut Oil
Sea Salt and Pepper to taste

Best to use Non~Stick Skillet to avoid added fats to cook egg whites

cover to cook egg inside thouroughly

Flip and Serve...
